Fav Virals of All Time: Guacomole Song

I'm hesitant to post this- at risk of having this tune stuck in my head for days on end. However, this gem of a viral deserves the recognition.
You may know the video. It rose to viral stardom in late 2015, and its been forming avocados in our hearts ever since.
BUT did you know...? Dr. Jean Rosenberg Feldman first posted her video to Youtube in 2010 as "Dr. Jean's Banana Dance" as an early learning song, designed to help develop coordination and increase mobility in young children. Dr. Jean's resume is quite impressive. Throughout her 40 years in education she has served as a classroom teacher, instructor of adults, author and consultant- but even she would probably have to admit that it's her creative use of produce metaphors and catchy melodies that led to the pinnacle of her career. Since posting the video more commonly known "Guacamole Song", it has gained 32 million views and has motivated both children and adults to get up and move.
Well now that we've all got it... here's my easy recipe to satisfy any guacamole hankering.
Hattie's Easy Guac
Ingredients:
3 Ripe Avocados
Half red onion (diced)
Half cup of torn cilantro
Jar of salsa
Optional- 2 jalapenos (diced)
Lime wedges
Directions:
Cut avocados in half, and remove pits. Use knife to cut the avocado flesh in a cross-hatch pattern, careful not to cut through the skin. Use spoon to scoop into bowl, scraping the skin to get all the good stuff!
Use back of spoon to mash the avocado flesh to the desired texture- I like mine a lil lumpy. Tip: if your avocados are not quite rip try leaving them in a brown paper back over night.
Stir in diced red onion, jalepenos (optional), and a few spoonfuls of jar salsa to taste. I like the flavor of the jar salsa or you can salt and pepper for seasoning.
Mix in the torn cilantro and top with fresh lime juice!
Serve with your favorite chips, veggies- or use as a topping for salads and sandwiches!
